Pangrattato with Black Olive Crumb

Mount Zero Team, Serves 6

2 thick slices of good quality sourdough bread, about 150 grams (slightly stale bread works best!)
2 Tbsp Mount Zero Frantoio Extra Virgin Olive Oil
1 garlic clove, finely chopped
1-2 Tbsp Mount Zero Black Olive Crumb
Zest of half a lemon
Handful of parsley, finely chopped
Freshly cracked black pepper, to taste
Mount Zero Pink Lake Salt, to taste

Using a food processor, blitz the bread on the pulse setting until coarsely crumbed.

Place a frying pan on medium heat, and when hot, add the olive oil. Add the breadcrumbs and toss to coat them in oil, and then fry until golden and crispy. Add chopped garlic, and cook for 1-2 minutes.

Transfer to a bowl and mix through olive powder, lemon zest, black pepper and parsley. Taste and season with more salt if needed.
