An ancient grain, freekeh is made from young, green wheat that is traditionally roasted over wood fires to burn off the husks, giving the grain a lovely, nutty flavour. 

The word freekeh has its roots in the Arabic word 'faraka', meaning 'to rub', which refers to the traditional method of rubbing the husk away from the dried wheat. The wheat is left to dry further and cracked or left whole. Freekeh is high in fibre (up to 4 times more fibre than brown rice), high in protein, and has a low G.l., ensuring sustained energy once eaten.
