Roasted Sprouts with Mount Zero Dukkah & Mount Zero Lemon Infused Oil

Ingredients

Base Dressing

Little tub greek yogurt
2 tablespoons tahini
Juice of one lemon
Clove of one garlic clove (micro-planed)
Little splash of maple syrup
Little splash of Mt Zero Olive Oil

Sprouts

100 g per person 

Garnish

Fresh mint leaves
Lots of Mount Zero Dukkah
Aleppo pepper
Drizzle with Mount Zero lemon oil

 

 

 

 

 

 

 

 

 

Method

Base Dressing

Mix and taste and season to your liking for more sweet or salty or more tahini etc etc

Spread on the bottom a serving plate

Sprouts

Season with salt and pepper and Mount Zero olive oil  and roast until well cooked and browned (baby sprouts I don’t prep at all) I like them really really roasted! Cool ever so slightly and then arrange on plate

Garnish

With fresh mint leaves, lots of Mount Zero Dukka, Aleppo pepper and to finish drizzle with Mount Zero lemon oil.
