French Green Lentil & Chickpea Salad with Mint Lemon Dressing

, Serves 4


1 CupMount Zero French Style Green Lentils
1 Stalk Celery, Finely Chopped
3 Spring Onions Chopped
1 cup Mount Zero Organic Kabuli Chickpeas
3 Large, Ripe Tomatoes, Chopped
1/2 Cup Coarsely Chopped Fresh Parsley
1/2 Cup Mount Zero Pitted Kalamata Olives, Chopped


Juice from 1 Large Lemon
Zest From 1/2 Lemon
2 Tablespoons Fresh Mint chopped finely
1/4 Cup Mount Zero Extra Virgin Olive Oil
Mount Zero Pink Lake Salt & Black Pepper to taste


Soak chickpeas overnight, rinse and then cook for approx. one hour or until al-dente

Cook the lentils until in boiling water, 15-20 minutes, drain lentils and bring to room temperature.

Mix the dressing ingredients together and season with salt and pepper.

Add the lentils, chickpeas and other ingredients into a large bowl, then pour on the dressing and toss to mix

Let salad rest at room temperature for 30 minutes, mix again, then serve.

Lovely on its own or serve with BBQ butterflied leg of lamb.
